Chantilly Potatoes

This weekend I found a great recipe that makes mashed potatoes even more delicious. First, you make your standard mashed potatoes and mound them up into a mountain like thing in a pie pan. Then you whip until stiff 1/2 cup of heavy cream (if you have more than 3 cups of potatoes you will have to increase this, I might do more next time because it's great), then fold in 1/2 cup Parmesan cheese into the whipped cream. You can add salt/pepper/cayenne pepper to taste - i just did a tiny bit of each (less than a teaspoon). Now that you have the whipped cream/cheese/spice mixture, 'frost' the mashed potatoes like it was a cake, but on the sides... basically cover them with the mixture as best as you can. Then stick them in the oven at 375 until it turns golden brown and the cheese is melted. I think this took about 10 minutes or so.
The end product is a creamy, cheesy, wonderful potato goodness that makes you wish you hadn't made the 3 cups to serve 4 people (it claims to be 6-8 servings, HA!)
