Snow

It's March 29th and it's snowing. March is typically our 'snowiest' month, but today is the first day of snow this month.. I thought that we were going to get away without any. It won't be one of the 'normal' march snow storms where we get an insane amount of snow and the airport shuts down - just enough to remind us that those 70 degree days we had last week are not the norm and that it is springtime in Colorado. In the words of everyone who has lived here during droughts and wildfires, "we can use the moisture."

Chantilly Potatoes

This weekend I found a great recipe that makes mashed potatoes even more delicious. First, you make your standard mashed potatoes and mound them up into a mountain like thing in a pie pan. Then you whip until stiff 1/2 cup of heavy cream (if you have more than 3 cups of potatoes you will have to increase this, I might do more next time because it's great), then fold in 1/2 cup Parmesan cheese into the whipped cream. You can add salt/pepper/cayenne pepper to taste - i just did a tiny bit of each (less than a teaspoon). Now that you have the whipped cream/cheese/spice mixture, 'frost' the mashed potatoes like it was a cake, but on the sides... basically cover them with the mixture as best as you can. Then stick them in the oven at 375 until it turns golden brown and the cheese is melted. I think this took about 10 minutes or so.
The end product is a creamy, cheesy, wonderful potato goodness that makes you wish you hadn't made the 3 cups to serve 4 people (it claims to be 6-8 servings, HA!)
Make it. Eat it. Love it.

Southern Sun Sunday

Sunday we went over to help Warren with a little demo work and then they took us out to Southern Sun for dinner.... Evan had fun watching the traffic while the rest of us were not being very appropriate - pretty standard for a day with Julie (Ed being there didn't help much).
SIGH. I miss Boulder!

Kelli & David's Wedding

On St. Patrick's Day we went to the wedding of the girl Matt and I met through. It was a crazy wedding - lots of people wearing green (someone had an awesome hat that we all wore). Matt and I danced the silliest we have ever danced... I was giving him piggy-back-rides around the dance floor. My legs are not pleased with the goofiness and I can barely walk now. Check out the little kid who fell asleep after requesting John Denver :)

Sushi

Last Thursday, we took my mom, Dave and Emma out to get sushi - it was delicious and fun. The first photo is my mom being embarrassed by a comment I made while Emma laughed. Good times!

Good-Bye Eva!

One of Matt's favorite co-workers, Eva, left AIM last week... we all went out for happy hour in her honor. For some reason, some people starting doing shots and Eva wanted to do them right, so there are a lot of pictures of her trying not to use her hands... after the 3rd one I got some good footage. We'll miss you Eva!

Crush Game

The 1st Saturday of Spring Break, Matt had some tickets from work to see the Crush (arena league football) play. Dan and Sarah joined us for some good screaming and yelling. At half time there were some kids doing jumps and tricks on their bikes. Most of those pictures turned out blurry.

I just got back from staying down at my mom's for over a week and will be uploading pictures soon.
I finally got a dress for the wedding, but won't be posted those photos because Matt might see it.
